This cheese is produced manually without additives, using raw sheep's milk, salt and thistle as ingredients. The thistle (Cynara cardunculus), is a natural coagulant agent of vegetable origin, which gives cheese its original and sui generis flavor. The selection of the best raw materials and the manufacturing processes used are combined in order to obtain a pure cheese with a unique texture and flavor.
