The cheese is produced by hand, without additives, using only raw sheep's milk, salt and thistle as ingredients. The thistle (Cynara cardunculus), is a natural coagulating agent of vegetable origin, which gives cheese its original flavour and sui generis. The selection of the best raw materials and the manufacturing processes used combine to produce a pure cheese with a unique texture and flavour.
