Look for a glass bottle that is pretty and that you can take to the table on any occasion. When it's empty, just refill it and count how many bottles you wouldn't have to throw away.

Then just use it! Season salads or sauté vegetables, use it to make soups, bake in the oven and once in a while, make chips. There's no greater pleasure in life than chips in olive oil (see our suggestions).

Olive oil fries recipe

Peel the potatoes and cut them into cubes, slices or sticks. Wash them well and put them in water with a dessert spoon of vinegar. If you like, add salt and remember that you're also salting the water, so you can add a little more!

Heat the olive oil in a frying pan and if it's the first time you're using it, put a small slice of bread in to fry. It will absorb some of the stronger flavours of the oil.

Drain the water and pat the potatoes dry! Now it's time to prepare the pitéu, fry your potatoes and they'll be drier and crispier.
