O S. Mamede Olive Oil comes from olive groves traditionaloften from trees millenary around the Serra de São Mamede, in Alto Alentejo, Portugal.

Extraction low temperature (between 27'C. and 31'C.) in order to preserve the best organoleptic characteristics of the oil obtained solely by mechanical processes and exclusively from olives of the Galega variety.

Olive oil fries recipe

Peel the potatoes and cut them into cubes, slices or sticks. Wash them well and put them in water with a dessert spoon of vinegar. If you like, add salt and remember that you're also salting the water, so you can add a little more!

Heat the olive oil in a frying pan and if it's the first time you're using it, put a small slice of bread in to fry. It will absorb some of the stronger flavours of the oil.

Drain the water and pat the potatoes dry! Now it's time to prepare the pitéu, fry your potatoes and they'll be drier and crispier.
